Using a traditional fermentation process, premium tofu is transformed into a delicately soft and flavourful product. Each piece is coated in a rich, aromatic sauce with a perfect balance of saltiness and covered in a fine layer of mycelium, a sign of authentic fermentation. Made with full, plump soybeans, this fermented tofu is exceptionally versatile.
